We like to see a good thick carcass spring of ribs, soft fleshing with width behind, with meat right down to the second thigh. The bull must be sound, have a flat shoulder, an overall presence and a calm temperament. Something that only eye appraisal can confirm is the ability to walk; feet must be immaculate and a strong head and jaw are essential.
